Tried to mix things up again with another unusual dish. We never eat seafood, so I got some shrimp at the store and made some garlic shrimp (camarones al mojo de ajo), which are really simple and tasty.
General recipe (as always, I have no clue how much of anything goes into my dishes):
Melt butter over low heat, add a lot of garlic.
Increase heat to medium-low, add finely diced onion, stir, and cook until the onion starts turning color.
Add shrimp, stir until coated, cook ~3 min.
Add lemon juice, salt, pepper, chili powder, and stir.
Increase heat to medium.
Every minute or so, stir, for ~5 min as the sauce reduces.
Remove the shrimp promptly.
Serve with refried beans, toasted corn tortillas, and/or lettuce.
Side of refried beans mixed with chiles and queso fresco.
I ate shrimp! Delicious!

Far too lazy for that (although I should, they’re not hard, just take time), these are just your typical Rosarita canned ones. I even microwaved them, because I’m a monster.
Tomorrow I cook something that takes some advance preparation, since I have enough time to do it. This was just a quick and dirty meal.

I should do that sometime. Tonight was probably the one, though. For some reason he had an insane shitsplosion around/after dinner that ended up everywhere. It was a “screw the wipes, it’s shower time” grade shitsplosion.

It’s my oldest daughter’s birthday and she requested pasta. Whipped up some pasta, garlic bread and parmesan encrusted chicken. Washed it down with red wine. Nine years ago today I became a father. Time flies.

That would be the worst. Not having what you need to deal with it and being out somewhere would make for the worst kind of suffering. How did you handle it?

I made them with my tí a Mary all the time when I was a kid. She always did it with reserved bacon grease/ fat. Delicious.
Realistically, they’re dirt cheap to make and typically utilize otherwise wasted stuff, but canned beans take no forethought when you’re whipping something up after a long day of work.

Resourceful. I did think of the diaper as a wipe angle, but when it’s up their back it tends to get everywhere.

Looks delicious! I put beef ravioli on to boil but found the propane tank empty. Had already cut the ‘maters and grated the Romano so I just ended up with a salad of spinach, ‘maters, Romano and pesto sauce. Dang, that was delicious! At least I have a JetBoil in reserve to heat water for coffee in the morning...

They could be, but baby doesn’t know how to eat tacos yet. Tomorrow I’ll make something that I will make into a taco, but the baby will only eat the fillings and pieces of tortilla.
